
Elise just signed a lease on an apartment in Columbia. She asked me for some recipes and cooking instructions, and I told her Anyone Can Cook! If you've seen the movie Ratatouille, you know that a rat helps the human cook by pulling on his hair. Here's a picture of me 'teaching' Elise to cook. ;)

Here's a way to cut down on cooking and eat healthy. I will give you the non-vegan, non-low-salt approach, although we have been doing it vegan and low salt. And, this is a full recipe; you'd maybe want to make half.
On Saturday night, put a bag of black beans in a large bowl of cold water to soak overnight. On Sunday, start by boiling 2-3 of chicken bouillon cubes in 4-5 cups of water in a very large pot, with a chopped onion (if you feel like it), and let the onion cook til its translucent. Add a large can -- 28oz -- of diced tomatoes and a large can of crushed tomatoes, and a small (4 oz) can of tomato paste. Then add the drained black beans and any other spices you feel like (at least pepper). Let this cook for about two hours on low, stirring occasionally.
Here's the cool part. You now have a base for dinners and lunches all week. You can eat it as a side dish with a hamburger. You can take a tupperware of it to work for lunch, adding a piece of fruit. You can add a bit more water or chicken broth, making it a soup. You can put a cup or two into a smaller saucepan and add a bunch of fresh spinach and/or other vegetables and those already cooked chicken strips to make a one-dish stew meal. When it's almost all gone, you add everything in the refrigerator that's going to go bad anyway and see what happens :-) Sometimes you shout with joy and sometimes you order a pizza!

P.S. I just made my batch for this week and realized a couple of things. With both cans of tomatoes, it's only a cup of chicken boullion needed (or 2 cups if you want it soup-like rather than stew-like), and you have to cook for about 3 hours.
I loved Ratatouille and there are PLENTY of rats here in the city but I haven't fallen to the level of inviting one of them to sit on my head and teach me to cook yet :)
